
Here are four of the beets from my garden. Aren't they enormous? I waited a little too long before pulling them out of the ground, but i think they will still be tasty. The salad spinner contains the beet greens that I later braised and added to some pasta with kalamata olives and feta cheese. It was yummy!
I baked the beets in foil tonight and I will use them tomorrow for some sort of dinner dish.
